Stevia-Sweet Blueberry Muffins

  • 1 1/2 cup All Purpose Flour
  • 33 packets Lantic Rogers Stevia
  • 1/3 cup Unsalted Butter
  • 1 large Egg
  • 1 teaspoon Baking Powder
  • 1/8 teaspoon Salt
  • 2/5 cup Milk
  • 3/4 cup Frozen Blueberries


  1. Preheat the oven to 325 °F (163°C). Line a muffin tin with paper cases
  2. Add half of the Lantic Rogers Stevia into milk, mix well
  3. In the bowl of an electric mixer fitted with a flat beater attachment, cream butter first, then add the other half of the stevia on low speed. Beat until light and fluffy.
  4. Slightly chop frozen blueberries
  5. Add the egg (at room temperature). Mix until just combined
  6. Gradually stir in milk and sweetener mix
  7. In another bowl, sift together the flour, baking powder and salt
  8. Make a well in centre of dry ingredients; pour in liquid and stir just until moistened
  9. Gently fold in blueberries
  10. Spoon into prepared muffin cups, filling to top
  11. Bake in the middle of the oven for 25 to 30 minutes or until a toothpick comes out clean
  12. Remove from oven and place on a wire rack to cool for 15 minutes before serving
